- 4 boneless, skinless chicken breasts
- 4 oz (115g) cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- 8–10 slices of bacon
- Salt and pepper, to taste
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Filling: In a medium bowl, mix together the cream cheese, mozzarella, cheddar, and green onions until well combined.
- Prepare the Chicken: Lay each chicken breast flat and carefully cut a slit on one side to create a pocket. Season the chicken both inside and out with salt and pepper.
- Stuff the Chicken: Fill each chicken breast with an even amount of the cheese mixture.
- Wrap with Bacon: Wrap 2–3 slices of bacon around each stuffed chicken breast. Secure with toothpicks if necessary.
- Bake: Place the bacon-wrapped chicken breasts in a baking dish and bake for 30–35 minutes, or until the chicken is cooked through and the bacon is crispy.
- Optional Broil: For extra crispiness, broil the chicken for an additional 2–3 minutes. Watch closely to prevent burning.
