Ingredients

  • 8 large flour tortillas
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup cooked chicken (optional)
  • 1/4 cup chopped onions
  • 1/4 cup chopped bell peppers
  • 1/4 cup sour cream (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay 4 tortillas on a baking sheet.
  3. Evenly spread the shredded cheese, cooked chicken (if using), chopped onions, and bell peppers over the tortillas. Sprinkle with salt and pepper.
  4. Place the remaining 4 tortillas on top to form quesadillas.
  5. Brush the tops of the quesadillas with olive oil.
  6. Bake for 8–10 minutes, flipping halfway through, until the tortillas are golden and crispy.
  7. Serve warm with sour cream, salsa, or your favorite dipping sauce.
