4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon unsalted butter

2 large onions, thinly sliced

2 teaspoons garlic, minced

1 teaspoon fresh thyme (or ½ tsp dried thyme)

1 tablespoon all-purpose flour

1 cup beef broth

½ cup chicken broth

1 tablespoon balsamic vinegar

Salt and black pepper, to taste

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh parsley for garnish (optional)
Directions:

Season chicken breasts with salt and black pepper on both sides.

Heat olive oil in a large skillet over medium-high heat. Add chicken and sear each side for 4–5 minutes until golden brown. Remove from skillet and set aside.

In the same skillet, add butter and sliced onions. Cook over medium heat, stirring frequently for about 20 minutes, until onions are deeply golden and caramelized.
