For the Chicken:

  • 1 lb (450 g) chicken thighs, diced
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tbsp mirin
  • 1 garlic clove, minced

For the Fried Rice:

  • 3 cups day-old jasmine rice
  • 2 eggs, lightly beaten
  • 1/2 cup peas (fresh or frozen)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 garlic clove, minced
  • 2 tbsp butter

For the Vegetables:

  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 1 tbsp soy sauce
  • 1 tbsp butter

For Yum Yum Sauce:

  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp rice vinegar
  • 1 tbsp sugar

Instructions

Prepare the Chicken:

  • Combine soy sauce, hoisin sauce, honey, mirin, and minced garlic in a bowl.
  • Add diced chicken, toss to coat, and marinate for 15 minutes.
  • Heat a large skillet or wok over high heat. Cook chicken for 6-8 minutes until caramelized and cooked through. Remove and set aside.

2. Cook the Fried Rice:

  • Heat butter in the same skillet. Add garlic and sauté for 30 seconds.
  • Push garlic to the side, pour in beaten eggs, and scramble until cooked.
  • Stir in rice, peas, soy sauce, and oyster sauce. Cook for 3-4 minutes until heated through. Set aside.

3. Sauté the Vegetables:

  • In the skillet, melt butter over medium heat. Add onions, zucchini, and mushrooms.
  • Drizzle soy sauce over vegetables and cook for 4-5 minutes until tender. Remove from heat.

4. Make the Yum Yum Sauce:

  • In a small bowl, whisk together mayonnaise, ketchup, garlic powder, paprika, rice vinegar, and sugar until smooth. Set aside.

5. Assemble the Dish:

  • Arrange chicken, fried rice, and vegetables on plates. Serve with Yum Yum sauce on the side.
