For the Chicken:
- 1 lb (450 g) chicken thighs, diced
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp honey
- 1 tbsp mirin
- 1 garlic clove, minced
For the Fried Rice:
- 3 cups day-old jasmine rice
- 2 eggs, lightly beaten
- 1/2 cup peas (fresh or frozen)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 garlic clove, minced
- 2 tbsp butter
For the Vegetables:
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 small onion, diced
- 1 tbsp soy sauce
- 1 tbsp butter
For Yum Yum Sauce:
- 1/2 cup mayonnaise
- 1 tbsp ketchup
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp rice vinegar
- 1 tbsp sugar
Instructions
Prepare the Chicken:
- Combine soy sauce, hoisin sauce, honey, mirin, and minced garlic in a bowl.
- Add diced chicken, toss to coat, and marinate for 15 minutes.
- Heat a large skillet or wok over high heat. Cook chicken for 6-8 minutes until caramelized and cooked through. Remove and set aside.
2. Cook the Fried Rice:
- Heat butter in the same skillet. Add garlic and sauté for 30 seconds.
- Push garlic to the side, pour in beaten eggs, and scramble until cooked.
- Stir in rice, peas, soy sauce, and oyster sauce. Cook for 3-4 minutes until heated through. Set aside.
3. Sauté the Vegetables:
- In the skillet, melt butter over medium heat. Add onions, zucchini, and mushrooms.
- Drizzle soy sauce over vegetables and cook for 4-5 minutes until tender. Remove from heat.
4. Make the Yum Yum Sauce:
- In a small bowl, whisk together mayonnaise, ketchup, garlic powder, paprika, rice vinegar, and sugar until smooth. Set aside.
5. Assemble the Dish:
- Arrange chicken, fried rice, and vegetables on plates. Serve with Yum Yum sauce on the side.
