  • 6 large flour tortillas
  • 2 cups shredded cooked chicken (rotisserie works great)
  • 1 tablespoon fajita seasoning
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 onion, chopped
  • 2 cups shredded Mexican blend cheese
  • Olive oil spray or drizzle

Instructions

  1. Preheat the oven to 425°F (220°C). Lightly spray or drizzle olive oil on a large sheet pan.
  2. In a medium bowl, toss the shredded chicken with fajita seasoning until evenly coated.
  3. Lay three tortillas on the sheet pan, overlapping slightly to cover the base.
  4. Evenly distribute the seasoned chicken, bell peppers, onion, and cheese across the tortillas.
  5. Cover with the remaining three tortillas, pressing them down gently.
  6. Place a second sheet pan on top to compact the quesadilla and ensure even cooking.
  7. Bake for 20 minutes, then remove the top sheet pan. Bake for an additional 5-10 minutes until golden and crispy.
  8. Let the quesadilla cool slightly before slicing into portions.
